Orange Blossom Cupcakes from Pamela's Heavenly Treats

Hello there let me introduce myself, my name is Pamela from Pamela's Heavenly Treats, where I make healthy desserts, mostly cupcakes and cookies. I am a wife, mother of 6, homeschool teacher and I have a small Healthy Cupcakes & Cookie business. Everything that I make is made with 100% Whole Wheat Flour and my secret ingredients. You will not know that you are eating healthy when you taste these treats.

You might be thinking healthy desserts, does that go together, and the answer is YES.  You can tweak any recipe you have to make it healthy.  That is what I did, and my family loves every one of my healthy treats.  I don't even buy all purpose flour or granulated sugar anymore, I have replaced those two ingredients with whole wheat flour and light brown sugar.  I also make my own buttermilk *1 tbsp white vinegar and 1 cup of fat free milk, let stand 5 minutes there you have it homemade buttermilk.  I use fresh brown eggs for all my desserts, I dont know but they taste so much better, it has to be the EGGS! 
Since Spring is almost here, I thought why not make a tasty spring cupcake.

Orange Blossom Mini Cupcake

Basic Cupcake Recipe
2 1/2 cups of whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup light brown sugar
1 tsp vanilla
1 cup buttermilk
2 eggs
1 tsp white vinegar
1 cup canola oil
2 tbsp orange zest
2 tbsp fresh orange juice
Set oven to 350
Mix wet ingredients, and then add dry ingredients until well blended. Fill cupcakes cups 1/2 way.
Bake for 12 minutes, once done cool on wire rack.
Frosting
1 stick unsalted butter (softened)
8 oz package cream cheese (softened)
3 cups powdered sugar
1 tsp vanilla
2 tbsp fresh orange juice
Cream butter and cream cheese, add powdered sugar one cup at a time, then add vanilla and orange zest, and frost cupcakes.

*These mini cupcakes taste like orange sherbert,
they are so good and taste just like Spring time*
