Oatmeal Crunch Cookies in a Mug! (recipe)

Yesterday I shared a recipe for Molten Marshmallow Fudge Cake in a Mug. While I remember something similar from my childhood, I had forgotten how yummy and fun these are to make...and now I am kind of hooked on these easy peasy single serving fresh from the (microwave) oven treats! So, of course, I had to try more...but this time a cookie!

The cookie is very much inspired by Melissa at No. 2 Pencil. As I searched for a basic cookie recipe (in a mug) too alter and make my own, Pinterest, and basically everyone else said Melissa's recipe was the bomb. So that is where I started.

This combination of ingredients is from one of my most favorite-est cookies in the universe! (which I have never shared on the blog...tragic!)

Oatmeal Crunch Cookie in a Cup

  • 1 Tablespoon butter, melted
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon vanilla
  • 1 egg yolk
  • dash of salt
  • 3 Tablespoons All Purpose Flour 
  • 1 1/2 tablespoons of Oatmeal (I used Old Fashioned Oats...you can use what you have on hand)
  • 1 1/2 tablespoons of Corn Flakes

  • Melt the butter in a microwave safe mug or bowl or jar
  • Add the sugar and brown sugar; mix well.
  • Add the vanilla; mix
  • Add the salt; mix well.
  • Add the egg yolk; mix well.
  • Add the flour; mix well.
  • Add 1 1/2 tablespoons of Oatmeal; mix well.
  • Add 1 1/2 tablespoons of Corn Flakes; mix well.
  • Microwave for 40 seconds and check for doneness. In my microwave, it takes about 55 seconds. (I am trying this out - below is a "recipe card for the recipe - right click and save and then you should be able to print - remember this is an experiment- let me know if you have trouble!)

  8. Hm my microwave took longer, and mine tastes or seems more like an oat muffin, which is ok, but I wonder what I did wrong? I measured the flour... Thnx

    Hmmm...each microwave takes a different amount of time. Did you cook for more than one minute? That could be the issue #1. Even if the top of the cookie does not look as done at 1 minute, let it cool and try it (kind of like when you take a cookie right out of the oven and it look moist still). The consistency/texture is thicker than what a cookie would be because it is in a mug...but maybe try a little less flour (2 T) and then add just a bit at a time to a more cookie like batter.

  14. I had some museli (this type had some raspberries and chocolate in it) and it was so delightful! Totally hit the spot. Also, I omitted the brown sugar and used a teaspoon of honey. Thanks for posting :)
